Banana-Tomato-Curry basic recipe – serves 2
- 1-2 cups basmati rice
- 1/2 pound organic shrimps
- 2 teaspoons almond oil
you can also use olive oil
- 1 scallion
- 1 onion
- 2 tomatoes
- 1 banana
- 1 1/2 teaspoons coriander seeds
- 1 teaspoon curry powder
- 1 teaspoon turmeric
- salt and pepper
While the water for the rice is boiling, cut the fresh vegetables in your preferred shape:
scallion, onion, tomatoes, banana.
Depending on how spicy you like your food, cut 1/2 chili in chunks.
Add rice to the boiling water.
Heat the oil in skillet over high heat. Sear spices (chili, coriander seeds and onion), then add shrimps.
For the next step add tomatoes and banana. Shortly sweat then add curry powder and turmeric as well as some water (1/2 cup). If using high quality spices these ingredients will make for a creamy sauce.
Now add done rice into the pan (IYS tip: rinse your rice with water prior to adding it into the pan).
Now final season to taste with salt and pepper and scallions.
